MUST I TRANSFER ALL OF MY ASSETS INTO THE TRUST?

No, but to avoid probate you want to transfer all of your titled assets into the trust. Those assets in the trust avoid probate. Also assets owned in such a way that title passes at your death by operation of law avoid probate; examples of this are assets owned jointly with right of survivorship, pay on death accounts and assets having a named beneficiary, such as a life insurance policy.
